Chili Conn Chili [May. 31st, 2008|07:40 pm]
I made some really good chili tonight... I think my chili is better than anything you can find at a restaurant. I like relatively thick chili, based on kidney beans and stewed tomatoes. I like the texture of the kidney beans juxtaposed with the stewed tomatoes, the smell of chili and cumin, and the slight warm kick from the cayenne pepper after you swallow. If you have similar tastes as me, you should like it, too.



Here's what you need:
11" 4-quart deep skillet (You need a nice big deep skillet or pot, no lid required)
stirring spoon (plastic, wooden, Teflon, whatever)
spatula ("turner", for browning the hamburger)

1 lb ground hamburger (85/15 meat/fat is fine, and cheaper than leaner packages) [~$4]
1/2 white onion, chopped (You could use the whole thing if you want. I like white onions, sweeter than yellow so I hear.) [$0.70]
Carroll Shelby's Chili Seasonings (ground chili peppers, aalt, garlic, cumin, oregano, onion, paprika, cayenne pepper) It looks like this:

2 cans red kidney beans [$0.70 each]
1 can stewed tomatoes [$0.70]
1 can Mexican style diced tomatoes (It has jalepenos and chilis in it) [$0.70]
Garlic Powder/Garlic Salt
Salt
Cayenne Pepper
Ground Cumin


Here's what you do:

1.) Brown the hamburger, drain the fat. Be careful of hot grease splatter. (I like to pour the fat into an empty aluminum can which I keep in the freezer/fridge - makes it easier to throw out later.)
2.) If you haven't chopped the onions yet, you can chop them while the hamburger is cooking.
3.) Add cans of kidney beans, stewed tomatoes, diced tomatoes, chopped onions, spices. Dump the whole can's contents in. We're not adding any water, so the liquid from the cans is the base of this chili. Stir and simmer 15+ mins. (Supposedly the longer you let the chili sit the more the flavors will mix and the better it will be. After it gets back up to temperature, I let mine sit at low heat for about half an hour, stirring occasionally. I break up the large stewed tomato chunks with the spoon/spatula.)

Just a ballpark estimate of the amount of spices I used:
Garlic Powder/Garlic Salt - 1tsp
Salt - 1/2 tsp (the spice packet already has a lot of salt)
Cayenne Pepper - 1/2 tsp (the more, the hotter!)
Ground Cumin - 1/4 tsp

You might want to bookmark this page just in case of Armageddon... It seems like a good reference on how to survive! I just browsed the book list - looks like a good collection. I imagine a post-apocalyptic library in some bunker stocked with all these books... It also has like a grocery list of food one would need to survive for a year, etc...

Curry Soup [May. 2nd, 2008|01:45 am]
Has anyone had a really good curry soup here in Austin? I had a tasty dish at a Pho place near Dallas but have yet to find anything like it down here in Austin... It was a Vietnamese place, actually, but I'd suspect a Thai place might have something similar? The soup I'm looking for is really thick (not watery/brothy). I tried Thai Kitchen, Madam Mams, and Thai Noodle House - all of them were too weak.
